Make these easy, crustless quiche cups at home using cottage cheese for a high-protein, Starbucks-style breakfast perfect for meal prep.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup mix-ins (e.g., shredded cheese, cooked spinach, diced ham)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
  2. In a blender or food processor, combine the cottage cheese, eggs, milk, salt, pepper, and garlic powder. Blend until completely smooth. This step is key for the creamy texture.
  3. Stir in your chosen mix-ins gently by hand.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
  6. Let the baked egg cups cool in the tin for 5 minutes before carefully removing them.
  7. Cool completely before storing. These make excellent meal prep egg cups.

Notes

  • For a smoother texture similar to the original, you can use an immersion blender directly in the measuring cup after mixing, or use a high-speed blender.
  • If you prefer a sous-vide method, cook at 170°F (77°C) for about 1 hour, or until set.
  • These protein egg cups store well in the refrigerator for up to 4 days. Reheat in the microwave for 30-45 seconds.
