Make this creamy, high-protein chicken salad using cottage cheese instead of mayonnaise. It is a quick, healthy lunch idea perfect for meal prep and delivers great flavor without heavy dressing.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup low-fat cottage cheese (small curd preferred)
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional additions: 1/4 cup chopped grapes or 2 tablespoons fresh dill

Instructions

  1. Place the cooked, shredded chicken into a medium mixing bowl.
  2. Add the cottage cheese, diced celery, and minced red onion to the bowl.
  3. In a small separate bowl, whisk together the Dijon mustard and lemon juice.
  4. Pour the mustard mixture over the chicken and cottage cheese. Add salt and pepper.
  5. Gently fold all ingredients together until they are just combined. Do not overmix; you want some texture from the cottage cheese curds.
  6. If using, stir in the optional grapes or fresh dill now.
  7. Taste the salad and adjust salt or pepper as needed.
  8. Serve immediately or cover and chill for at least 30 minutes for best flavor. This is a great sandwich filling or wrap base.

Notes

  • For an extra smooth texture, pulse the cottage cheese in a food processor briefly before mixing it with the other ingredients. This creates a creamier base for your high protein chicken salad.
  • This recipe is excellent for meal prep. Store it in an airtight container in the refrigerator for up to 4 days.
  • If you prefer a tangier flavor, add 1/2 teaspoon of apple cider vinegar along with the lemon juice.
