Ingredients
Scale
2 cups Masa Harina (white or yellow)
1 1/2 cups hot water (near boiling)
1/4 teaspoon salt
Instructions
In a medium bowl, combine the Masa Harina and salt.
Gradually add the hot water while mixing with your hands until a soft dough forms.
Knead the dough for about 2 minutes until it is smooth and no dry spots remain. If the dough feels sticky, add a small amount of Masa Harina; if it feels dry, add a few drops of water.
Cover the dough with a damp cloth and let it rest for 15 minutes.
Divide the dough into 16 equal balls, about the size of a golf ball. Keep the dough balls covered while you work.
Heat a comal or heavy skillet over medium-high heat. Do not add oil.
Place one dough ball between two sheets of plastic wrap or inside a tortilla press lined with plastic. Press firmly until the dough forms a flat circle about 5 to 6 inches in diameter.
Carefully peel the tortilla off the plastic and place it on the hot comal.
Cook for 30 to 45 seconds until the top surface looks dry and small bubbles start to form.
Flip the tortilla and cook the second side for about 1 minute until it puffs slightly.
Flip one last time and cook for 15 seconds. The tortilla should be soft and pliable.
Remove the tortilla and immediately wrap it in a clean kitchen towel or place it in a tortilla warmer to keep it soft while you cook the remaining tortillas.
Notes
If your tortillas crack when folding, the dough is too dry. Add a little more water next time, or briefly dip the dough ball in water before pressing.
To revive day-old tortillas, lightly dampen them and heat them briefly on a dry skillet or microwave them wrapped in a damp paper towel for 15 seconds.
Use this recipe for tacos, enchiladas, or cut and fry them for chips.
