Make light, airy, and fluffy cloud bread using cottage cheese for a high-protein, low-carb, and gluten-free bread substitute.

Ingredients

Scale
  • 1 cup cottage cheese, full fat or low fat
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the cottage cheese in a food processor or blender. Process until completely smooth, scraping down the sides as needed. You must remove all lumps.
  3. Add the egg yolks to the smooth cottage cheese mixture and pulse until just combined. Set aside.
  4. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. The peaks should hold their shape when you lift the whisk.
  5. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  6. Carefully fold in the remaining egg whites in two additions, working gently to keep as much air in the mixture as possible. Do not overmix.
  7. Drop rounded spoonfuls of the batter onto the prepared baking sheet, forming about 6 to 8 rounds.
  8. Bake for 25 to 30 minutes, or until the tops are golden brown and the bread is set.
  9. Remove from the oven and let cool slightly on the baking sheet before serving.

Notes

  • For a savory version, add 1/2 teaspoon garlic powder and a pinch of dried herbs to the cottage cheese mixture.
  • If you do not have cream of tartar, you can substitute it with 1/2 teaspoon of lemon juice.
  • Ensure your egg white bowl is completely free of grease or water for proper whipping.
