Make a rich, light, and airy chocolate mousse using only three ingredients. This recipe is quick, requires no baking, and sets fast.

Ingredients

Scale
  • 6 ounces bittersweet chocolate, chopped
  • 1 cup heavy whipping cream, divided
  • 1 tablespoon granulated sugar

Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. Heat 1/4 cup of the heavy whipping cream in a small saucepan until it just simmers. Do not boil.
  3. Pour the hot cream over the chocolate. Let it sit for two minutes, then whisk until the mixture is completely smooth and glossy. Set aside to cool to room temperature.
  4. In a separate, chilled bowl, combine the remaining 3/4 cup of heavy whipping cream and the sugar. Beat with an electric mixer until stiff peaks form.
  5. Gently fold one-third of the whipped cream into the cooled chocolate mixture to lighten it.
  6. Carefully fold in the remaining whipped cream until just combined. Do not overmix; stop folding when no white streaks remain.
  7. Spoon the mousse into individual serving cups or ramekins.
  8. Chill in the refrigerator for at least one hour before serving.

Notes

  • For an elegant presentation, top with a dusting of cocoa powder or a single fresh raspberry before serving.
  • You can use semi-sweet chocolate if you prefer a sweeter mousse.
  • This mousse sets best when chilled for two hours or more.
