Make restaurant-style chicken fried rice quickly at home using day-old rice for the best texture. This recipe delivers savory, authentic flavor in under 20 minutes.

Ingredients

Scale
  • 3 cups cold, day-old cooked white rice
  • 1 tablespoon vegetable oil
  • 1 cup cooked, diced chicken breast
  • 2 large eggs, lightly beaten
  • 1/2 cup frozen peas and carrots mix
  • 2 cloves garlic, minced
  • 1/4 cup yellow onion, finely diced
  • 3 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon ground white pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat. Add the vegetable oil.
  2. Add the diced chicken and cook for 2 minutes until heated through. Remove the chicken and set it aside.
  3. Add a little more oil to the hot pan if needed. Pour in the beaten eggs. Scramble the eggs quickly until just set, about 1 minute. Remove the eggs and set them aside with the chicken.
  4. Add the diced onion and minced garlic to the pan. Stir fry for 30 seconds until fragrant.
  5. Add the cold rice to the pan. Break up any clumps with your spatula. Stir fry for 3 to 4 minutes until the rice is heated through and slightly toasted.
  6. Push the rice to one side of the pan. Add the peas and carrots to the empty space and cook for 1 minute. Mix them into the rice.
  7. Return the cooked chicken and eggs to the pan.
  8. In a small bowl, mix the soy sauce, oyster sauce (if using), sesame oil, and white pepper. Pour this sauce mixture evenly over the rice.
  9. Stir fry everything together vigorously for 2 minutes until the rice is evenly coated and hot. Serve immediately.

Notes

  • Use rice that has been cooked and refrigerated for at least one day. Freshly cooked rice is too moist and will result in gummy fried rice.
  • Keep your heat high when stir-frying the rice to achieve a slightly toasted, fluffy texture.
  • Adjust soy sauce to your taste preference. Start with less and add more if needed.
