Ingredients
Scale
2 lbs russet potatoes, scrubbed and diced into 1-inch pieces
1 tablespoon olive oil
1 lb ground beef
1 packet (1 oz) taco seasoning mix
1 cup water
2 cups shredded cheddar cheese, divided
1/2 cup sour cream, for topping
1/4 cup chopped green onions, for topping
2 tablespoons salsa, for topping
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
Toss the diced potatoes with olive oil and spread them in a single layer on a baking sheet. Bake for 15 minutes until slightly softened and beginning to brown.
While potatoes bake, cook the ground beef in a large skillet over medium heat until browned. Drain off any excess fat.
Stir the taco seasoning mix and water into the cooked ground beef. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
Remove the partially cooked potatoes from the oven. Transfer them to the prepared baking dish.
Spoon the seasoned ground beef mixture evenly over the potatoes.
Sprinkle 1 1/2 cups of the shredded cheddar cheese over the beef layer.
Return the dish to the oven and bake for another 10 to 12 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven. Top with the remaining 1/2 cup of cheese, sour cream, green onions, and salsa before serving immediately.
Notes
For crispier potatoes, ensure they are spread in a single layer on the baking sheet before the initial bake.
You can substitute ground turkey or chicken for the ground beef if desired.
