Cook ground beef, pasta, and taco seasoning together in one pot for a quick, cheesy, family-friendly dinner with minimal cleanup.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups beef broth
  • 8 ounces elbow macaroni or small pasta shape
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for topping)

Instructions

  1. Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain any excess grease.
  2. Stir in the taco seasoning mix and cook for 1 minute until fragrant.
  3. Pour in the beef broth, undrained diced tomatoes and green chilies, and add the dry pasta to the pot.
  4. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
  5. Remove the pot from the heat. Stir in the milk until combined.
  6. Add the shredded cheddar cheese, stirring until the cheese melts and the sauce becomes creamy.
  7. Serve immediately, topping individual portions with sour cream if desired.

Notes

  • Use 1 cup of water mixed with 1 tablespoon of cornstarch if you prefer a thicker sauce instead of adding milk.
  • You can substitute ground turkey or ground chicken for the ground beef.
  • For extra flavor, add 1/2 teaspoon of cumin along with the taco seasoning.
