Make this easy cheesy rice recipe on the stovetop in under 30 minutes. It is a creamy, comforting side dish perfect for busy weeknights.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the garlic powder and stir for 30 seconds until fragrant.
  2. Add the uncooked rice to the saucepan and toast for 1 to 2 minutes, stirring constantly until the edges look slightly translucent. This step adds depth to your flavor.
  3. Pour in the chicken broth, milk, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 to 18 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  5. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. This lets the steam finish cooking the rice perfectly.
  6. Remove the lid. Stir in the shredded cheddar cheese and Parmesan cheese until the cheese melts and the rice becomes creamy.
  7. Serve your cheesy rice immediately. You earned some kudos for this quick win!

Notes

  • For extra creaminess, stir in 2 tablespoons of cream cheese along with the shredded cheese.
  • This recipe works well as a base for adding cooked chicken or steamed broccoli florets at the end.
  • Use long-grain white rice for the best texture in this stovetop method.
