Ingredients
Scale
4 large bell peppers (any color)
1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (15 ounce) can tomato sauce, divided
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked white rice
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut-side up in the prepared baking dish.
Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
Add the chopped onion to the skillet and cook until soft, about 5 minutes. Stir in the garlic, oregano, salt, and pepper. Cook for 1 minute more.
Stir in the cooked rice and half of the tomato sauce (about 3/4 cup) into the beef mixture. Mix well.
Spoon the beef and rice filling evenly into the hollowed-out bell peppers.
Pour the remaining tomato sauce around the base of the peppers in the baking dish.
Cover the baking dish tightly with aluminum foil. Bake for 40 minutes.
Remove the foil. Sprinkle the shredded cheddar cheese over the top of each pepper.
Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
Notes
You can use any combination of bell pepper colors you prefer.
For a slightly saucier filling, substitute the cooked rice with 1 cup of cooked brown rice and add 1/4 cup of water or beef broth to the meat mixture before stuffing.
If you prefer a sharper flavor, use Monterey Jack cheese instead of cheddar.
