Make this easy, hearty ground beef bake using queso dip for a rich, cheesy, Southwestern-style comfort meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
  • 1 jar (15 ounces) processed cheese dip (queso)
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the taco seasoning mix into the beef and onion mixture according to the package directions, usually by adding a small amount of water.
  4. Remove the skillet from the heat. Stir in the Ro-Tel tomatoes and green chilies, the queso dip, and the sour cream until well combined.
  5. Spread the beef mixture evenly into the prepared baking dish.
  6. Sprinkle the Monterey Jack and cheddar cheese evenly over the top of the beef mixture.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.
  8. Remove the dish from the oven. Sprinkle the crushed tortilla chips over the melted cheese.
  9. Return to the oven for 5 more minutes, or until the chips are lightly toasted.
  10. Let the bake rest for 5 minutes before serving.

Notes

  • Serve this bake with extra salsa, guacamole, or sliced jalapeños on the side.
  • You can substitute the ground beef with ground turkey for a lighter version.
  • For a one-dish meal, mix 1 cup of cooked rice into the beef mixture before baking.
