Ingredients
Scale
2 cups cooked, shredded chicken
1 cup uncooked white rice
2 cups chicken broth
1 (10.5 ounce) can cream of chicken soup
1/2 cup milk
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup shredded cheddar cheese, divided
1/2 cup panko breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
In a large bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, milk, onion powder, garlic powder, and pepper. Mix until all ingredients are well combined.
Pour the mixture into the prepared baking dish.
In a small bowl, mix 1/2 cup of the shredded cheddar cheese with the panko breadcrumbs. Drizzle the melted butter over this mixture and toss to coat the breadcrumbs evenly.
Sprinkle the remaining 1/2 cup of plain shredded cheddar cheese over the chicken and rice mixture in the baking dish.
Spread the buttered breadcrumb mixture evenly over the top of the cheese layer. This creates the golden top.
Bake for 40 minutes, or until the rice is tender and the liquid is absorbed.
For the golden top, switch the oven setting to broil during the last 2 to 3 minutes. Watch carefully to prevent burning. Remove from the oven when the topping is deep golden brown and bubbly.
Let the casserole rest for 5 minutes before serving.
Notes
To keep the chicken moist, use pre-cooked chicken that was simmered in broth rather than baked dry.
For a richer flavor, substitute half of the chicken broth with heavy cream.
You can add 1 cup of frozen peas or chopped broccoli florets to the mixture before baking for added vegetables.
If you prefer a crispier top without broiling, increase the oven temperature to 400 degrees Fahrenheit for the last 10 minutes of baking.
