Bake chicken breasts in a rich Parmesan cream sauce with asparagus and sundried tomatoes for a comforting, flavorful dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 ounces cream cheese, cubed
  • 1/2 cup sundried tomatoes, drained and chopped
  • 1 cup fresh asparagus spears, trimmed
  • 1/4 cup shredded mozzarella cheese (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Season the chicken breasts on both sides with salt, pepper, and garlic powder. Place the seasoned chicken in the prepared baking dish.
  3. In a medium saucepan over medium heat, combine the heavy cream and chicken broth. Bring the mixture to a simmer.
  4. Reduce the heat to low. Whisk in the Parmesan cheese and cubed cream cheese until both are fully melted and the sauce is smooth.
  5. Stir in the chopped sundried tomatoes.
  6. Pour the cream sauce evenly over the chicken breasts in the baking dish.
  7. Arrange the trimmed asparagus spears around the chicken pieces in the sauce.
  8. Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. If using, sprinkle the mozzarella cheese over the top during the last 5 minutes of baking until melted and lightly browned.
  10. Let the dish rest for 5 minutes before serving.

Notes

  • Serve this dish over rice, pasta, or with crusty bread to soak up the extra cream sauce.
  • For a lighter sauce, substitute half of the heavy cream with whole milk.
  • You can substitute broccoli florets or sliced mushrooms for the asparagus.
