Ingredients
Scale
2 pounds skirt steak or flank steak
1 cup fresh orange juice
1/2 cup fresh lime juice
1/2 cup chopped fresh cilantro
4 cloves garlic, minced
1/4 cup olive oil
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
Instructions
Place the skirt steak or flank steak in a large, resealable plastic bag or shallow dish.
In a medium bowl, whisk together the orange juice, lime juice, cilantro, garlic, olive oil, cumin, oregano, salt, pepper, and chili powder to create the best carne asada marinade.
Pour the marinade over the meat, ensuring it is fully coated.
Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, for maximum flavor absorption.
Remove the meat from the marinade, letting excess drip off. Discard the used marinade.
Grill the carne asada over high heat for 3 to 5 minutes per side for medium-rare, depending on thickness.
Let the meat rest for 5 minutes before slicing thinly against the grain.
Notes
For a spicy carne asada marinade, add one minced jalapeƱo or serrano pepper to the marinade mixture.
This citrus carne asada marinade works well for both skirt steak carne asada and flank steak carne asada.
Patting the meat dry after marinating helps achieve a better sear when grilling.
