Make these simple, salty-sweet Christmas cookies using Ritz crackers, caramel, and chocolate. They require no baking and come together fast for holiday parties or gifting.

Ingredients

Scale
  • 1 sleeve Ritz Crackers
  • 1 cup caramel candies, unwrapped (or equivalent caramel sauce)
  • 1 tablespoon butter
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional, for smoother drizzle)
  • 1/2 cup chopped pecans or holiday sprinkles (optional topping)

Instructions

  1. Line a baking sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared sheet.
  2. In a small saucepan over low heat, combine the caramel candies and butter. Stir constantly until the candies are completely melted and smooth.
  3. Spoon about one teaspoon of the warm caramel mixture evenly over the center of each Ritz cracker.
  4. Place the baking sheet in the refrigerator for 15 minutes, or until the caramel is set firm.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth.
  6. Drizzle the melted chocolate over the set caramel crackers.
  7. Immediately sprinkle with chopped nuts or holiday sprinkles, if desired.
  8. Return the cookies to the refrigerator until the chocolate is completely firm, about 30 minutes. Store in an airtight container.

Notes

  • For a quicker set, you can place the crackers in the freezer for 10 minutes after adding the caramel.
  • If you prefer a thicker chocolate layer, use a full cup of chocolate chips without adding coconut oil.
  • These cookies keep well at room temperature for up to three days or refrigerated for one week.
