Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 2 cups thinly sliced apples
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • Whipped cream or ice cream for serving (optional)

Instructions

  1. In a bowl, whisk together flour, eggs, milk, salt, melted butter, sugar, and vanilla extract until smooth.
  2. Heat a lightly oiled crepe pan or non-stick skillet over medium-high heat.
  3. Pour about 1/4 cup of batter onto the pan, swirling to create a thin, even layer.
  4. Cook for 1-2 minutes until the edges lift and the bottom is golden brown. Flip and cook for another minute.
  5. Slide the crepe onto a plate and repeat with the remaining batter.
  6. In a separate pan, melt 2 tablespoons of butter over medium heat.
  7. Add the sliced apples, brown sugar, cinnamon, and nutmeg.
  8. Cook, stirring occasionally, until the apples are tender and caramelized, about 5-7 minutes.
  9. Fill each crepe with the apple mixture and fold or roll.
  10. Serve warm, with whipped cream or ice cream if desired.

Notes

  • For thinner crepes, add a little more milk to the batter.
  • Ensure your pan is heated properly for easy crepe flipping.
  • Adjust the sweetness of the apple filling to your preference.
