Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped apples
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press this mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes until lightly golden. Set aside to cool.
  3. In a large bowl, beat the cream cheese and ¾ cup sugar until smooth and creamy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Pour the cream cheese mixture over the graham cracker crust.
  6. Spoon the chopped apples evenly over the cream cheese layer.
  7. Drizzle the caramel sauce over the apples. Using a knife or skewer, gently swirl the caramel into the apples and cream cheese.
  8. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  9. Let the bars cool completely in the pan on a wire rack.
  10. Chill in the refrigerator for at least 2 hours before cutting into bars.

Notes

  • For an extra touch of sweetness, you can add a sprinkle of cinnamon to the apple mixture.
  • Ensure your cream cheese is fully softened for a smooth, lump-free cheesecake filling.
  • Chilling the bars is key to getting clean cuts. Give them enough time in the fridge!
