Bake chicken breasts topped with tomato, mozzarella, and basil, finished with a sweet and tangy balsamic glaze for a simple, flavorful dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 4 slices fresh mozzarella cheese
  • 8 thin slices of ripe tomato
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Place the chicken breasts in the prepared baking dish. Drizzle with olive oil and sprinkle evenly with Italian seasoning, salt, and pepper.
  3. Bake the chicken for 15 minutes.
  4. Remove the dish from the oven. Top each chicken breast with two tomato slices and one slice of fresh mozzarella cheese.
  5. Return the dish to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven. Sprinkle the chopped fresh basil over the chicken.
  7. Drizzle the balsamic glaze over the top of each piece before serving.

Notes

  • For extra flavor, you can sear the chicken in a skillet for 2 minutes per side before placing it in the oven.
  • Use fresh, high-quality mozzarella for the best melt and flavor.
  • If you do not have balsamic glaze, simmer 1/4 cup of balsamic vinegar in a small saucepan until it reduces by half to create your own glaze.
