Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage, cut into 1-inch pieces
  • 2 ears of corn, cut into 3-inch sections
  • 1 pound baby red potatoes, halved or quartered
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare four large pieces of heavy-duty aluminum foil.
  3. In a large bowl, combine the shrimp, sausage, corn, and potatoes.
  4. In a small bowl, whisk together the melted butter, Cajun seasoning, garlic powder, smoked paprika, and cayenne pepper (if using).
  5. Pour the butter mixture over the shrimp and vegetable mixture. Toss gently to coat everything evenly.
  6. Divide the mixture equally among the four foil pieces.
  7. Seal each foil packet tightly, ensuring no steam can escape.
  8. Place the foil packets directly on the grill grates.
  9. Grill for 12-15 minutes, or until the shrimp are pink and cooked through and the potatoes are tender.
  10. Carefully remove the packets from the grill. Open them slowly to allow steam to escape.
  11. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like bell peppers or onions to your foil packets.
  • Adjust the amount of cayenne pepper to control the spice level.
  • Ensure your foil is heavy-duty to prevent tearing.
