- 4 cups whole milk
- 1 cup heavy cream
- 6 ounces bittersweet chocolate, chopped
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup Baileys Irish Cream
- 1/4 cup bourbon
- Whipped cream for topping
- Chocolate shavings for garnish
- Combine milk, heavy cream, chopped chocolate, cocoa powder, sugar, and salt in a medium saucepan.
- Heat the mixture over medium heat, whisking constantly until the chocolate is fully melted and the mixture is smooth. Do not let it boil.
- Reduce the heat to low and let it warm through for 5 minutes, stirring occasionally.
- Remove the saucepan from the heat. Stir in the Baileys Irish Cream and bourbon.
- Pour the hot chocolate into mugs.
- Top each serving with whipped cream and chocolate shavings before serving immediately.
Notes
- For a peppermint flavor, substitute 2 tablespoons of the bourbon with peppermint schnapps.
- If you prefer a thicker drink, reduce the milk slightly or add 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water before heating.
- You can prepare the base chocolate mixture ahead of time and store it in the refrigerator for up to two days; reheat gently before adding the alcohol.
