Ingredients
Scale
1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 large egg, beaten
1/2 cup all-purpose flour
1/2 cup panko breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
For the Sauce:
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha (adjust to your spice preference)
1 tablespoon honey or maple syrup
1 teaspoon rice vinegar
1/2 teaspoon garlic powder
Instructions
Prepare the chicken: Place the beaten egg in one shallow bowl and mix the flour, panko, salt, and pepper in a second shallow bowl.
Dredge the chicken pieces first in the egg, letting excess drip off, then press firmly into the panko mixture to coat completely.
Preheat your air fryer to 390°F (200°C). Lightly spray the air fryer basket with cooking spray.
Arrange the coated chicken pieces in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding. Spray the tops of the chicken lightly with cooking spray.
Air fry for 10 to 12 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
While the chicken cooks, prepare the sauce: Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder in a small bowl until smooth.
Place the hot, crispy chicken bites into a large bowl. Pour about two-thirds of the sauce over the chicken and toss gently until all pieces are coated.
Serve immediately with remaining sauce on the side, over rice, or with a side of slaw.
Notes
For extra crispy coating, you can lightly spray the coated chicken again just before placing it in the air fryer.
If you do not have an air fryer, you can bake the chicken at 400°F (200°C) for 18-20 minutes, flipping once.
Adjust the amount of sriracha to control the heat level of the sauce.
