Make tender zucchini slices incredibly crispy with a golden Parmesan crust. This easy recipe delivers a flavorful, low-carb side dish or snack perfect for weeknights.

Ingredients

Scale
  • 3 medium zucchini
  • 1 large egg
  • 2 tablespoons milk (any kind)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs (for extra crisp)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper. Give yourself a high-five for getting the oven ready!
  2. Wash the zucchini and slice them into rounds about 1/4 inch thick. If you prefer sticks, cut them lengthwise into spears.
  3. Set up a dredging station with three shallow bowls. In the first bowl, whisk the egg and milk together. In the second bowl, mix the flour, salt, and pepper. In the third bowl, combine the grated Parmesan cheese, panko breadcrumbs, and garlic powder.
  4. Dip each zucchini slice first into the flour mixture, shaking off any excess. Then, dip it into the egg mixture, letting the extra drip off. Finally, press both sides firmly into the Parmesan mixture until well coated. You are doing great!
  5. Arrange the coated zucchini in a single layer on the prepared baking sheets. Do not overlap them; give them space to crisp up.
  6. Bake for 10 minutes. Carefully flip each round or stick. Bake for another 8 to 10 minutes, or until the coating is golden brown and crispy.
  7. Remove from the oven. Take a moment to admire that golden crust—that is a win! Serve immediately as a healthy appetizer or simple side dish.

Notes

  • For the crispiest result, pat the zucchini slices dry with a paper towel before starting the coating process. This removes excess moisture.
  • If you want a low-carb option, skip the panko breadcrumbs and use only extra Parmesan cheese in the final coating bowl.
  • This recipe works well as a quick vegetable bake when you need a fast, flavorful addition to dinner.
