Prepare this easy, no-bake breakfast ahead of time for busy mornings. These apple cinnamon overnight oats taste comforting and keep you full, making them a perfect grab-and-go meal.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 cup milk (dairy or non-dairy for vegan option)
  • 1/4 cup plain Greek yogurt (optional, omit for vegan)
  • 1/2 medium apple, finely diced
  • 1 tablespoon maple syrup or sweetener of choice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a jar or container with a lid, combine the rolled oats and chia seeds.
  2. Add the milk, Greek yogurt (if using), maple syrup, cinnamon, vanilla extract, and salt to the jar.
  3. Stir all ingredients well until everything is combined. Make sure no chia seeds are stuck at the bottom.
  4. Gently fold in the finely diced apple pieces.
  5. Seal the container and place it in the refrigerator for at least 4 hours, or preferably overnight.
  6. In the morning, stir the oats. If the mixture is too thick, add a splash more milk until you reach your desired consistency.
  7. Serve cold directly from the jar. Add extra cinnamon or chopped nuts on top if you like.

Notes

  • For a vegan option, use plant-based milk (like almond or soy) and omit the Greek yogurt, or substitute it with a dairy-free yogurt alternative.
  • If you want a stronger apple pie flavor, add 1/4 teaspoon of apple pie spice blend instead of just cinnamon.
  • These oats keep well in the refrigerator for up to 4 days, making them excellent for batch meal prep on Sunday.
  • To boost the protein content, add one scoop of your favorite vanilla or unflavored protein powder when mixing the wet ingredients.
