You can make incredibly light and fluffy pancakes using almond flour. This recipe is simple, gluten-free, and perfect for a satisfying low-carb breakfast or weekend brunch.

Ingredients

Scale
  • 1 1/2 cups almond flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsweetened almond milk (or dairy-free milk of choice)
  • 1 tablespoon melted coconut oil or butter, plus more for the griddle
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the dry ingredients: In a medium bowl, whisk together the almond flour, baking powder, and salt. Make sure there are no clumps.
  2. Mix the wet ingredients: In a separate bowl, whisk the eggs until they are light and frothy. Add the almond milk, melted coconut oil or butter, and vanilla extract. Whisk until just combined.
  3. Combine wet and dry: Pour the wet mixture into the dry ingredients. Gently whisk until the batter comes together. Do not overmix; a few small lumps are fine. This step is key for fluffy results!
  4. Heat the griddle: Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with coconut oil or butter.
  5. Cook the pancakes: Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2 to 3 minutes, or until bubbles appear on the surface and the edges look set.
  6. Flip and finish: Carefully flip the pancakes and cook for another 1 to 2 minutes until golden brown and cooked through.
  7. Serve immediately: Stack your light and airy pancakes and top them with your favorite sugar-free toppings or fresh berries. Give yourself some kudos for making a delicious, healthy breakfast!

Notes

  • For extra fluffy keto almond flour pancakes, let the batter rest for 5 minutes before cooking. This allows the almond flour to absorb the liquid fully.
  • If you prefer a slightly sweeter taste without adding sugar, you can add a few drops of liquid stevia or a teaspoon of monk fruit sweetener to the wet ingredients.
  • This recipe works well for paleo pancakes too, as it is grain free.
